Garden Tomato, Basil & Pesto Pizza!

This dish is so good, it’s been my dinner for the past two years. I just can’t seem to get enough of it, and I know you won’t either. Enjoy!
Ingredients:
- 1 pre-baked pizza crust (Boboli works well)
- 1 cup of shredded mozzarella
- 3/4 cup of pesto sauce (don’t bother making your own; Classico puts together a nice spread)
- 3 ripe tomatoes (chopped up and seeds gutted)
- 1/4 teaspoon of crushed red pepper
- 1/4 cup of dried basil leaves
- Olive oil spray
Directions:
- Pre-bake the oven to 425 degrees.
- Spray both sides of the pizza with olive oil.
- Pre-cook the pizza for 8 minutes (use this time to prep your tomatoes).
- Take out the pizza, and spread the pesto, sprinkle the cheese and tomatoes, and add the red pepper (in that order).
- Heat for an additional 8 minutes.
- Take out the pizza, SHUT OFF THE OVEN, and add a generous sprinkling of basil (good stuff!)
- Cut it up and enjoy!
