Sweet Egg-Salad Sandwich

Sometimes, you just gotta have an egg-salad sandwich. Well, here’s my recipe for one, including instructions for how to hard boil an egg (certainly not rocket science, but necessary to know anyways). This recipe makes one tasty sandwich, and there’s only 8 grams of fat and 311 calories! Eat up!

Hard Boil:
There’s really no magic secret to this. Place one fresh egg into a pan, and fill it with water (not too much - just enough to cover one inch on top of the egg). Bring the water to a boil. Only once the water is boiling should you set your timer for 10 minutes. Have a bowl of cold water ready, and once the time is up, place the egg in it (this prevents split whites and sticky yolks from forming). After a few minutes (once the egg has cooled), take it out and rub it between your hands to loosen the shell and peel it off. Congratulations - you just hard boiled an egg.

Ingredients:
- 1 large hard-boiled egg
- 1 tablespoon of low-fat mayo (or regular, if you’re one of “those” people)
- 1 teaspoon of yellow mustard
- 1/2 teaspoon of sugar (or Splenda, if you’re watching your wasteline)
- 2 slices of bread (I’m a bit of a health nut, so I always go with wheat. But whatever floats your boat)
- 2 or 3 slices of ripe tomato

Directions:
- Cut up your egg in little chunks (doesn’t have to be perfect).
- Mix in your mayo, mustard and sugar with the egg.
- Add this mixture to your bread slices (you can toast or not toast it), and top it off with the tomato.
- Enjoy!

“Hot-Bod” Banana Bread

They say the best-tasting food is the worst for you (at least I’ve always found that to be true). But this banana bread recipe from Sparkpeople tickles your taste buds while sparing your mid-section at the same time (only 1 gram of fat per slice!) Now hear me out…the secret is applesauce, but you never know unless you try. I promise you won’t be sorry.

Ingredients:
- 2 cups of flour
- 3/4 cup of sugar
- 3 teaspoons of baking powder
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1 egg
- 3/4 cup of milk
- 1/4 cup of applesauce
- 1 1/2 cups mashed bananas (now’s the perfect time to use those brown ones you were about to throw away!)

Directions:
- Preheat the oven to 350.
- Grease a bread loaf pan, unless it’s non stick.
- Mix all DRY ingredients into a large bowl well.
- Mix all WET ingredients in another bowl thoroughly.
- Add the liquid mix to the dry mix and stir thoroughly.
- Put the combination into the bread loaf pan and cook for approximately 55 to 65 minutes.
- To be safe, check the loaf’s color around 50 minutes or so. It should be a nice golden brown, but insert a toothpick in the center to make sure (if “glue” comes out, keep cooking).
- Let the bread cool for about 5 to 10 minutes.
- Cut it up!

Garden Tomato, Basil & Pesto Pizza!

This dish is so good, it’s been my dinner for the past two years. I just can’t seem to get enough of it, and I know you won’t either. Enjoy!

Ingredients:
- 1 pre-baked pizza crust (Boboli works well)
- 1 cup of shredded mozzarella
- 3/4 cup of pesto sauce (don’t bother making your own; Classico puts together a nice spread)
- 3 ripe tomatoes (chopped up and seeds gutted)
- 1/4 teaspoon of crushed red pepper
- 1/4 cup of dried basil leaves
- Olive oil spray

Directions:
- Pre-bake the oven to 425 degrees.
- Spray both sides of the pizza with olive oil.
- Pre-cook the pizza for 8 minutes (use this time to prep your tomatoes).
- Take out the pizza, and spread the pesto, sprinkle the cheese and tomatoes, and add the red pepper (in that order).
- Heat for an additional 8 minutes.
- Take out the pizza, SHUT OFF THE OVEN, and add a generous sprinkling of basil (good stuff!)
- Cut it up and enjoy!
